getting healthy woes.

Kerry recently found out that his cholesterol is high. The doctor recommended he go on medication feeling that his lifestyle probably didn't contribute to the high numbers. Taking medicine each day seems kinda scary to us so that pretty much leaves us at eating better and exercising more. We've been eating more fish which Shelby is still convinced is going to kill her and more vegetarian dishes. I never realized how much cholesterol is in my cooking! No wonder Kerry has a cholesterol problem. My kids like to eat my chicken parmesan. Tonight I decided to make it just the same but instead of using chicken, I used eggplant. I knew that if I told them what I was making, they would not even try it so I told them it was chicken parmesan. I was hopeful that I could pull this off. Plated up the dishes and Shelby dug right in. Brayden took one bite and asked if I added giant mushrooms to it. I assured him there were no giant mushrooms. Shelby then answered, "Brayden, it's chicken." Brayden didn't buy it. I finally admitted it was eggplant. I figured at this point it was going to be hard to get Brayden to eat it, but I hoped that Shelby had eaten enough to decide that it was still good. The moment she found out, she did not take another bite. It instantly turned into something gross. Why does the bad stuff have to taste so good?

Kids are so like that! Why? I think because I was eating Turtle soup which yes its good but I could understand if u think its chicken its not so "Weird" Same as I had Wild boar Sauce and it was so delish!Itis the fear of the unknown?Go figure but I love fish!!! I dome my fish in tinfoil and put little water in a pan~ So it is steemed. If u have any good fish tips let me know. April

oloMy kids would do the same thing. I wish that I could eat a little healthier. I hope Kerry gets everything back in tack.

SO funny, we stick with the old stand by of toast, chicken nuggets, or mac & cheese...yummy!

Darren has high cholestol also, it runs in his family...scary

Jodi I was thinking of you when I bought some Salmon today!It is so good for you but I found a way to make it taste good. The fish lady at Smith's is good. She keeps up with having Fresh fish and is helpful. She puts the southwest seasoning on it. I bought it 2 days in a row! Not sure if your husband could have the seasoning?? When we have fish I have to make kids something else. Hope all is well. Nice 2 c u 2night! April

It is so hard to get healthy stuff into your kids. My mom was a pro. She tells me all the stuff I fell for and I can't believe all the good stuff she got into me. Wild Oats has a ton a organic stuff that tastes so good in their deli section. They have recipes and everything. They even have good frozen meals and they are delish! I am the pickiest eater ever and I love them.

Wow Jodi! Your blog is so fabulous! I haven't checked it in a long time--it was fun to "catch up" It is hard to make diet changes--I know! I have found a few healthier things that my kids like!
